Quickest and Delicious Stuffed Pepper Recipe

This is without question the quickest and one of the most delicious stuffed pepper recipes I have ever made!

Start with one box of MamaMancini’s Meatballs and Sunday Sauce which is 6 meatballs and 6 servings of sauce.

After heating the meatballs, crush them in the sauce with a fork and mix in 1 cup of cooked rice.

Cut the ends off of 8 cubanelle peppers, also known as banana peppers or Italian sweets. Remove all the seeds and stuff with the heated meatball mixture. Lightly coat peppers with olive oil.

Preheat a baking dish in a 350 degree oven for 15 min. Arrange the peppers onto the heated baking dish. Pour 1/2 cup of water into the baking dish. Bake for 45 min turning every 10 min. Depending on the size of the peppers you might need to cook them a little longer or a little shorter. You want to see a golden brown color and the pepper skin should become wrinkled. You can serve these with some extra sauce or just the way they are. I made 8 peppers from this recipe using medium size peppers.

TIP: Many recipes call for boiling the cleaned peppers for 5 min before stuffing and baking them. I love the stuffed peppers cooked in the oven without boiling. I find the boiling process takes some of the flavor away and makes them too mushy for my taste. These are great the next day and they freeze really well. Just remove from freezer place in your fridge to thaw and heat up!
